Ingredients (for a 25cm mold)

100g of soft butter

175 g of sugar

2 eggs

100 ml of honey

1 tablespoon of cold water

125 ml of 18% fresh cream

250 g of wheat flour

1 teaspoon of baking soda

2 teaspoons of cocoa

100g of dried fruit (chopped walnuts, raisins, dried cranberries)
Preparing gingerbread

Cream the butter and sugar : whisk the butter with the sugar until you get a creamy mixture.

Add the liquid and dry ingredients : incorporate the egg yolks (reserve the whites), honey, water, cream, flour (reserve 1 teaspoon), baking soda, cocoa, and gingerbread spice mix. Mix until you obtain a smooth batter.

Incorporate the dried fruit : gently mix the dried fruit with the reserved flour and then add them to the dough.

Whisk the egg whites until stiff peaks form: gently fold them into the batter for a lighter texture.

Baking : Pour the batter into a rectangular baking tin (approximately 25 cm) lined with baking paper. Bake in a preheated oven at 170°C for approximately 60 minutes. Check for doneness with a knife.
