Benefits : Antioxidant, remineralizing, supports digestion and skin health. Preparation : 10 minutes. Makes one jar of pesto (approximately 250g).

Ingredients :
- 1 to 2 cups of olive oil (depending on the desired texture)
- ½ cup chopped pine nuts or cashews
- 2 to 3 cloves of garlic
- Several handfuls of fresh nettle leaves (well washed)
- ¼ cup grated Parmesan cheese (Optional)
- A little salt and pepper to taste
Preparation :
- Wash the nettle leaves thoroughly.
- Place the olive oil, walnuts and garlic in a blender or food processor. Blend until you obtain a creamy texture.
- Add the fresh (uncooked) nettle leaves little by little and blend until the pesto is smooth and creamy. (If you blend it well, the nettles won't sting anymore!)
- Stir in the grated Parmesan and mix well.
- Check the consistency, add a little more olive oil if you prefer a thinner pesto.
- Taste and adjust the salt and pepper to your liking.
Tip : This pesto can be used to accompany pasta, grilled vegetables, on toast, or as a base for sauces. For an even more flavorful pesto, you can replace the garlic with shallots, or add fresh herbs like basil or thyme!
