Soothing linden syrup

Ingredients :

  • 30 to 40 g of dried linden flowers
  • 800g of sugar (preferably cane sugar for a more natural version)
  • Juice of 2 freshly squeezed lemons
  • 1 liter of water

Preparation :

    1. Flower infusion :

      • In a large saucepan, bring the water to a boil.
      • Add the dried linden flowers, remove from heat, then let it steep for about 30 minutes to 1 hour, covered.

    2. Filtering and mixing :

      • Filter the infusion using a sieve or a clean cloth to remove the flowers.
      • Return the liquid to the saucepan, then stir in the sugar and lemon juice.

    3. Heating the mixture :

      • Heat over low heat, stirring regularly until the sugar is completely dissolved.
      • Avoid boiling the mixture to preserve the soothing properties of the linden flowers.

    4. Bottling :

      • Pour the hot syrup into previously sterilized glass bottles or jars.
      • Seal tightly, turn the containers upside down to create a vacuum, and let them cool.

    Trick :
For a more concentrated syrup, slightly increase the amount of flowers or reduce the volume of water.
