Ingredients :
- 100g of black elderflowers
- 5 lemons (freshly squeezed juice)
- 2 liters of water
- 1 kg of sugar (preferably cane sugar)
Tip : Adjust the amount of sugar according to your preferences, up to 500g per liter of liquid for a less sweet version.
Preparation :

Infusion:
Place the flowers in a large container, pour boiling water over them and let them steep in a cool place for at least 12 hours (ideally overnight). -
Filter and mix:
Strain the mixture to remove the flowers. Add the sugar and lemon juice. -
Heat:
Gently heat the mixture until the sugar is completely dissolved. Caution: do not boil. -
Bottling:
Pour the still-hot syrup into sterilized bottles or jars. Seal tightly, turn them upside down, and let them cool completely. This syrup, once prepared in this way, does not require pasteurization and can be stored for a long time.

As a preventative measure: 2 tablespoons before bedtime for adults, 1 tablespoon for children.
